Allow me to offer some unsolicited input on your itinerary:
1. Uganda – The Speke Hotel in Uganda has two nice outdoor terrace restaurants. One is an Indian restaurant, the other is an Italian/Continental restaurant. Good for watching people. Note that many of the “people” will be hookers going to and from the adjacent Rock Garden Bar/Nightclub. This may have all changed; I haven’t been there in five years.
2. Nepal – Kathmandu is one of the more disappointing places I’ve been. Surprisingly dirty, smelly and polluted. I don’t think you’ll want to spend too much time in the city itself.
3. Easter Island – Absolutely beautiful. Do yourself a favor and rent a small car/jeep once you arrive and drive the coastal road (you can’t get lost, there are only 2-3 roads on the island and virtually no traffic). It takes about a half day to circle the whole island, stopping off to see the statues you want. Much more enjoyable than a guided tour in a minibus. Probably romantic too. I was alone. I’m a loser. Rent the car/jeep though, it’s worth it.
4. In Cambodia, don’t go to Sihanoukville. It’s a scruffy and now kind of rough and sleazy resort area. The Thai beach resorts are much nicer. There are a lot nicer places in Cambodia than Sihanoukville (basically everywhere else in Cambodia). I love Cambodia, dislike Sihanoukville.
